*makes 15 medium biscuits*
1 cup coconut
1 cup rolled oats
1 Tbsp golden syrup
1/2 tsp bicarb soda
2 Tbsp boiling water
Mix together flour, sugar, coconut and rolled oats. Melt butter and golden syrup. Dissolve bicarb soda in the boiling water and add to butter in golden syrup. Make a well in center of flour, stir in the liquid. Place spoon fills on cold greased tray. Bake 15-20 minutes at 180 degrees, until golden. Leave on tray 5-10 minutes to firm up, then transfer to wire wrack to cool completely.

These are super easy to make and a great project to do with kids. They’re basically healthy as well (with the oats and all 😉 ). The only problem I had was that the mixture was a little dry and wouldn’t stick together to form a ball, I just melted a little more golden syrup and butter together and mixed it in and it was perfect!
