Recipe I used for the vanilla cupcake mixture is from: Edmonds Cookery Book
*Makes 18 medium/small cupcakes*
125g butter, melted
1 teaspoon vanilla essence
1/2 cup caster sugar
1 cup plain flour
2 teaspoons baking powder
1/4 cup milk
Cream butter, vanilla and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Fold flour and baking powder into mixture. Stir in milk. Place 18 cupcake cases into cupcake trays. Spoon mixture evenly into cupcake cases. Bake at 190 degrees for 15 minutes. Cool on wire rack. Ice cupcakes once cooled.
Em’s Cupcake icing:
1/2 cup icing sugar
a few drops of black food colouring
1 tablespoon butter
2 Tablespoons of boiling water
Place all ingredients in a bowl and mix together. Add more hot water or icing sugar if mixture is to stiff or runny.
Assembling Ninja cupcakes:
Use a butter knife to smooth half of the icing mixture on to cupcakes, leaving an oblong shape on the center top of cupcake for the eyes to be seen. Using the other half of icing mixture, make little ninja eyes on exposed oblong shape of cupcake with a pipping bag.
This was a surprisingly easy and tasty recipe. A great idea if you are thinking of baking for a boys birthday. Depending on how much icing you put on each cupcake, you might need to make more icing. Make sure the icing mixture is not to runny so it sticks nicely to the cupcake! 🙂
