*makes 8 small/medium pita breads*
1-1/2 tsp salt
1 Tbsp sugar
2-1/4 tsp active dry yeast
2 Tbsp olive oil
1 cup warm water
2-1/2 cups flour
Mix salt, sugar, yeast, oil and water together in a medium bowl until dissolved. Mix in flour until a stiff dough is formed. kneed dough on a lightly floured surface for 5 minutes. Divide dough in to 8 balls of equal size. Place dough balls on a board, cover and leave to rise for 20 minutes. Place rack on the lowest level of oven and preheat oven on high, leave an oven tray in the oven to warm up. Flatten the dough balls with your hand and roll each ball out with a rolling pin until you have the desired sized pita pocket. Take out warmed tray and place 4 (or however many can fit on your tray) dough balls on the tray. Bake for 8 minutes or until puffed. remove from oven. Poke the top of each pita pocket with a spatula and flatten. Repeat with remaining dough balls.
Note: Very simple and tasty recipe. Make sure you keep an eye on your breads while they are in the oven as they brown very fast! I used baking paper on my tray to prevent sticking and it made everything a lot easier.
