*makes 80 small shapes/25 average size gingerbread men*
These gingerbread men are super easy to whip up and are super fun to decorate. A great project to make with kids. You don’t need to make them just for Christmas, they are delicious any time of year! Definitely let your cookie dough cool in the fridge for at least 30 minutes otherwise the dough will be difficult to roll out and cut.
1/2 cup golden syrup
1/4 cup sugar
2 1/2 cups flour
1 tsp baking powder
1/2 tsp baking soda
3 tsp ground ginger
3/4 tsp ground cloves
1 tsp cinnamon
Heat butter, sugar and golden syrup in a saucepan, until butter has melted. cool slightly then beat in egg. Sift in flour, baking powder, baking soda, ginger, cloves and cinnamon. Mix until combined. Refrigerate for 30 minutes. Roll the dough out on a lightly floured board. Using a gingerbread cutter or cardboard template, cut the dough out in to shapes. Place on lined oven tray. Bake at 180 C for 7-8 minutes or until lightly browned. Decorate when cooled.
To dress your gingerbread men in pants:
(because nobody likes naked gingerbread men!)
Melt chocolate in a bain marie. Dunk bottoms of gingerbread men in chocolate. Place on baking paper and decorate with sprinkles, chopped nuts or leave plain. Leave to set for at least 30 minutes.
Mix together 8 tblsp icing sugar, 1 tblsp milk and 3 drops of food colouring. Dip in bottoms of gingerbread men. Leave to set for at least 30 minutes.
Make sure not to roll your cookie dough out to thin otherwise your cookies will get to crispy and burn very quickly.
