Classic Shortbread

SAM_1627*makes about 30*

Ingredients:

250g butter

1 cup icing sugar

1 cup cornflour

2 cups flour

Method:

Cream the butter and sugar together in a bowl. Stir in cornflour and flour. At this point I found the mixture to be pretty dry so I added a few splashes of milk and played it by eye until the mixture looked like a good consistency to knead on a lightly floured surface. once dough is kneaded, roll it out and cut biscuit shapes. Place biscuits on a greased oven tray. Prick biscuits with a fork and then bake at 150 degrees for 30 minutes.

A nice classic recipe. Very quick and easy to make and made loads of biscuits. I love how this recipe doesn’t use that many ingredients, simple and Delicious. I feel like shortbread biscuits are the type of biscuits that should be at a tea party… tea and biscuits are the best!
