A nice simple, delicious recipe and hey it’s got a lot of coconut so it must qualify as being healthy right?… well it’s freaking yummy anyways. You’ve got to be quick to get a slice of this loaf in our house, it’s practically consumed in seconds!
My apologies also for not being consistent in posting, we were away doing a Color Run (pretty sure you can expect a post on that in this coming week, right Lib?). We have also both started Correspondence school this year so we are getting our scheduling skills on to sort out studying and blogging times along with everyday-life things.
1 cup flour
2 tsp baking powder
1 cup sugar
1 cup coconut
3/4 cup milk
1/2 tsp vanilla
In a large bowl, mix the flour, baking powder, sugar and coconut together. Add the egg, milk and vanilla and stir until combined. Pour into a greased loaf tin. Bake at 190 degrees for 45 minutes.
Use a loaf tin that the mixture will fill up halfway, I used a tin that was to small resulting in my loaf rising to much and getting a little more browned on top then what I prefer.
