Vegetarian Chickpea Patties


I found this recipe last year when I decided to go vegetarian (I have changed the original recipe a little to suit my taste). I use these patties all the time for burgers, wraps, pretty much anything as a meat substitute. These patties have egg and chickpeas which are great sources of protein. Here is my version of chickpea patties:


400g can chickpeas, rinsed and drained

1 egg

1 tsp mixed herbs

1/2 tsp chilli powder

salt and pepper

1/2 cup breadcrumbs

1/4 cup parsley, chopped

1 onion, chopped



Blend chickpeas, egg, mixed herbs, chilli, salt and pepper together to form a smooth paste. Stir in breadcrumbs, parsley and onion. With floured hands, form the mixture into 4 flat even-sized patties. Heat oil in a frying pan and cook patties for 2-3 minutes on each side until golden brown.

Makes 4 medium patties.

If the mixture is sticky and difficult to form into patties, add extra breadcrumbs. If the mixture is too dry, add a splash or two of cooking oil. You can easily change up this recipe and create new flavours. These patties are also great for freezing.
