These were extremely easy and simple to make. It is a good recipe to use if you need to whip up a batch of biscuits fast or just stop your cookie cravings! I got the recipe from here: old-fashioned-ginger-biscuits. I have adjusted the amount of ginger in my recipe because I find that the ginger I have is not strong enough for my taste and plus you don’t call them ginger biscuits for no reason!
Ingredients:
125g butter
120g sugar
1 egg
1 tablespoon golden syrup
1 teaspoon cinnamon
4-5 teaspoons ground ginger
1 teaspoon baking powder
1 teaspoon baking soda
250g flour
Method:
Preheat oven to 180C.
Beat butter and sugar together until creamy. Add the egg, syrup and spices, mix well.
Add baking powder, baking soda and flour.
Roll into small balls and place on a greased tray, flatten with a floured fork, allow room for spreading.
Bake for 10-12 minutes.
Watch carefully after 10 minutes as they can burn quickly.
Place the biscuits on a wire wrack to cool, the biscuits will crisp up as they cool down.
makes 30-40 biscuits.
