Caramel Cake

This cake is very rich be so delicious. It was a little difficult to get out of the cake tin so make sure you grease the tin well. This cake is almost like a pudding due to how crumbly and soft it is. This will pretty much melt in your mouth!

Cake ingredients:

1 Tbsp golden syrup

1 cup milk

1 tsp baking soda

120g butter

1 cup white sugar

1 egg

1 tsp vanilla essence

1 1/2 cups flour

1 tsp baking powder

(icing ingredients near the end of post)

Method:

Warm syrup and milk in a saucepan. When syrup has melted, remove from heat and stir in baking soda.

In a large bowl, cream sugar and butter. Add vanilla and egg and beat well. Stir in flour, baking powder and the milk mixture until combined.

Pour the mixture into a greased 20cm cake tin. Bake at 180C for around 45 minutes.

Let cake cool on a wire rack before applying the icing.

Icing ingredients:

4 Tbsp brown sugar

60g butter

1 tbsp milk

1/2 tsp vanilla essence

icing sugar

Add brown sugar, butter, milk an vanilla essence to a saucepan and bring to the boil for 1 minute, stirring constantly. Take off heat and add icing sugar until the mixture is at a spreadable consistency.
