Yo yos are my favourit biscuits. I mean think about it, instead of getting one normal biscuit, when you get a yo yo, you get two biscuits and icing. It’s like 2 for 1 plus icing! And honestly who doesn’t want that.
This recipe is nice, the biscuit is crumbly and the icing is rich and buttery. I would suggest adding some passion fruit or lemon to the icing to give the biscuits a bit more flavour though, they are a bit plain otherwise.
Classic Yo Yos
170g plain flour
55g custard powder
170g butter, softenend
1/3 cup icing sugar
150g icing sugar
2 tbsp unsalted butter, softenend
2 tsp warm water
1/4 tsp vanilla extract
Preheat oven to 180°C. Line two cookie trays with baking paper.
Whisk flour and custard powder together, stir to make sure everything is evenly distributed and set aside. Add the butter and sugar to a large bowl or stand mixer and cream toghether until pale and creamy. Add the flour and mix until combined. Gently knead together.
Roll teaspoons full of mixture and place on prepared on tray (make 24 halves). Flatten on tray and press down slightly with a fork. Bake for 15-18mins. Cool on a cooling rack completely.
Sift the icing sugar into a medium bowl or stand mixer. Add the butter, vanilla and water and beat until creamy. Sandwich together with the filling.
Store in an airtight container in a cool dry place for up to a week.
