A very simple and light recipe but delicious all the same. The original recipe states a cooking time of 30 minutes but I found that you need to allow a least 45 minutes for the pudding to cook all the way through. Over all a nice, sweet, and sticky pudding.
1 cup flour
1 tsp baking powder
50g butter, melted
¾ cup caster sugar
½ cup milk
1 ½ cups boiling water
25g butter, melted
2 tsp golden syrup
Mix flour, baking powder, butter and sugar together in an oven-proof bowl. Add the milk and mix well.
In a medium bowl, combine sauce ingredients and pour evenly over the top of first mixture. Do not stir. Bake at 180C for around 40-45 minutes.
Serve warm with cream and golden syrup.
