1 1/4 cups butter, softened
2 cups sugar
2 large eggs
2 teaspoons vanilla extract
2 cups flour
3/4 cup cocoa
1 teaspoon baking soda
1/2 tespoon salt
(feel free to add chocolate chips or peanut butter to the recipe!)
Beat butter and sugar together until light a fluffy. Add eggs and vanilla and beat well.
Fold in the flour, cocoa, baking powder and salt with a spoon.
Roll mixture into balls and place them on a greased baking tray.
Dip a fork in icing sugar and use it to flatten each biscuit ball, regularly dipping the fork back into the icing sugar to avoid sticking.
Bake biscuits at 180C for 15-20 minutes or until biscuits look cooked on the outside. These biscuits will harden a lot when left to cool so don’t worry if your biscuits are quite soft to touch when first taken out of the oven.
Now you can either ice or dust your biscuits with icing sugar.
