Okay so I may have run out of walnuts to put on top of my Afghan biscuits… which means they aren’t completely authentic but here is a picture of the real thing:
Afghan biscuits are basically flour,cocoa and cornflakes all mixed together and rolled into biscuits. They are then topped with chocolate icing and a half walnut. Some of you possibly haven’t had these before as they are a traditional New Zealand biscuit. But fear not, here is your chance to try these amazing biscuits!
200g butter, softened
1/2 cup sugar
1 1/4 cup flour
1/4 cup cocoa
2 cups cornflakes (slightly crushed into little pieces)
Chocolate Icing (see below)
Beat butter and sugar together until light a fluffy.
Fold in sugar, flour, cocoa and cornflakes.
Roll mixture into balls and place them on a greased baking tray, add a splash or two of milk if the mixture is to crumbly to shape.
Gently flatten each ball into a biscuit shape with the palm of your hand or a fork.
Bake at 180C for 15 minutes or until lightly browned and firm.
Leave biscuits to cool before icing them with chocolate icing and topping with walnuts.
Makes around 12 medium biscuits.
1/2 cup icing sugar
1 Tablespoon cocoa
1 teaspoon butter, softened
Combine all ingredients in a small bowl, adding more icing sugar or hot water to get the desired consistency.
