Oat Crunch

This crunchy slice is definitely a hit in our house. I like to think that it’s pretty healthy because there is a whole cup of oats in the mixture (Don’t ruin this for me). The oats make the slice deliciously crunchy but you have to make sure you add enough butter to the mix otherwise the mixture will be too crumbly to cut into bars. These slice/bars are perfect to pack in a lunch box or just to have a snack with a cup of tea!

Ingredients:

1 cup rolled oats

1 cup coconut

1/2 cup brown sugar

1/2 teaspoon vanilla essence

115g butter, melted

Method:

Put the oats, coconut, sugar and vanilla into a bowl. Melt the butter and pour over the dry ingredients. Stir well until all ingredients are combined. Turn ingredients out in to a greased 12 x 8 inch tin. Spread out ingredients to form a tightly packed layer in tin. Bake at 180C for 20-25 minutes (keep an eye on your slice as it browns very quickly after the 20 min mark). Remove from oven and carefully mark the slice into bars with a knife. Leave to get completely cold before removing from tin.

Makes around 20 bars.
